Baked Chicken Breast with Herbs
This is a herb baked chicken that's both flavourful and super juicy. It is also fairly simple to make. Chicken breasts can’t be beat for a healthy, fast dinner. And there’s many ways you can jazz them up with a variety of spices, herbs, and marinades.

INGREDIENTS:
- 2 skinless, boneless chicken breasts, about 150g each
- 2 tablespoons olive oil
- ½ teaspoon garlic powder
- ½ teaspoon dried basil, or 3 leaves fresh basil
- ½ teaspoon dried thyme or 1 sprig, leaves picked of fresh thyme
- ½ teaspoon dried oregano or 1 sprig, leaves picked of fresh oregano
- ½ teaspoon salt
- freshly ground black pepper, to taste
- ½ teaspoon paprika (optional)
DIRECTIONS:
- Preheat your oven to 425 F. or a convection oven to 400 F.
- In a small bowl, mix together the garlic powder, basil, thyme, oregano, salt and pepper until combined.
- Trim any fat and pound the chicken breasts to an even ½ inch thickness. Lightly coat the breasts in olive oil, and then generously rub the spice mix on both sides of the chicken. Dust with paprika if desired.
- Place the chicken breasts in a baking dish and cook for 20-25 minutes, using an instant read thermometer to check temperature. It should be between 150 and 155. ) It will rise to 160 degrees as it rests. Let the chicken rest for about 5 minutes to allow the juices to redistribute within the meat. Serve with vegetable side(s) and enjoy.
