Salmon with juniper berries and Raspberry Coulis
A nice bright looking dish with juniper spice and raspberry goodness.

INGREDIENTS:
- For the Fish:
- 4 150 g salmon filets
- 32 dried juniper berries
- 1/4 cup olive oil
- salt and black pepper to taste
- For the Coulis:
- 2 cups fresh raspberries
- 2 tablespoons maple syrup
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 4 tablespoons fresh chopped chives
DIRECTIONS:
- Press 4 juniper berries into each side of the 4 fillets of salmon. Make sure they break the surface and don't just sit on top. Brush with oil and grill or saute until the fish is done (130 ° internal temperature). Season with salt and pepper.
- To make the coulis, place the raspberries, maple syrup, lemon juice, salt, pepper and paprika in a blender and liquify. Optionally strain the seeds.
- Spoon the coulis over the salmon. Add a few chopped chives and serve immediately.
