Salmon with juniper berries and Raspberry Coulis

A nice bright looking dish with juniper spice and raspberry goodness.

INGREDIENTS:

  • For the Fish:
  • 4 150 g salmon filets
  • 32 dried juniper berries
  • 1/4 cup olive oil
  • salt and black pepper to taste
  • For the Coulis:
  • 2 cups fresh raspberries
  • 2 tablespoons maple syrup
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 4 tablespoons fresh chopped chives

DIRECTIONS:

  1. Press 4 juniper berries into each side of the 4 fillets of salmon. Make sure they break the surface and don't just sit on top. Brush with oil and grill or saute until the fish is done (130 ° internal temperature). Season with salt and pepper.
  2. To make the coulis, place the raspberries, maple syrup, lemon juice, salt, pepper and paprika in a blender and liquify. Optionally strain the seeds.
  3. Spoon the coulis over the salmon. Add a few chopped chives and serve immediately.
