Pan seared Salmon with Roasted Red Pepper Alfredo Sauce

INGREDIENTS:

  • Salmon
  • 4 salmon fillets (about 1-1/2 lbs)
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 2 tablespoons olive oil
  • Roasted Red Pepper Alfredo Sauce
  • 1 tablespoon butter
  • 1 clove garlic, minced
  • 1 tablespoon flour
  • 1/4 cup whipping cream
  • 3/4 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup jarred roasted red peppers, drained
  • Salt and pepper to taste
  • 2 tablespoons minced fresh parsley

DIRECTIONS:

  1. Salmon
    Pat salmon dry with paper towels and season on both sides with salt and pepper. Heat a large skillet over medium-high heat, then place butter and oil in pan, swirling until bottom is coated. Sear salmon 3-4 minutes on each side until salmon is golden and registers 145F. Keep salmon warm.
  2. Roasted Red Pepper Alfredo Sauce
    In a small saucepan over medium-high heat, melt butter. Saute garlic in butter 1 minute or until fragrant. Whisk flour into butter until smooth then gradually whisk in cream and milk. Bring sauce to a simmer over medium-high heat, stirring occasionally until sauce is slightly thickened. Remove from heat and stir in Parmesan cheese.
    Place sauce and roasted red peppers in a high-speed blender or food processor and blend on high speed until sauce is smooth. Return sauce to pan and season with salt and pepper to taste.
    Return salmon fillets to pan and nestle into sauce. Top with parsley and serve immediately. Enjoy!
