Pan seared Salmon with Roasted Red Pepper Alfredo Sauce

INGREDIENTS:
- Salmon
- 4 salmon fillets (about 1-1/2 lbs)
- Salt and pepper to taste
- 1 tablespoon butter
- 2 tablespoons olive oil
- Roasted Red Pepper Alfredo Sauce
- 1 tablespoon butter
- 1 clove garlic, minced
- 1 tablespoon flour
- 1/4 cup whipping cream
- 3/4 cup milk
- 1/4 cup grated Parmesan cheese
- 1/2 cup jarred roasted red peppers, drained
- Salt and pepper to taste
- 2 tablespoons minced fresh parsley

Saute the Salmon
Pat salmon dry with paper towels and season on both sides with salt and pepper. Heat a large skillet over medium-high heat, then place butter and oil in pan, swirling until bottom is coated. Sear salmon 3-4 minutes on each side until salmon is golden and registers 145F. Keep salmon warm. -
Make the Sauce
In a small saucepan over medium-high heat, melt butter. Saute garlic in butter 1 minute or until fragrant. Whisk flour into butter until smooth then gradually whisk in cream and milk. Bring sauce to a simmer over medium-high heat, stirring occasionally until sauce is slightly thickened. Remove from heat and stir in Parmesan cheese. -
Blend
Place sauce and roasted red peppers in a high-speed blender or food processor and blend on high speed until sauce is smooth. Return sauce to pan and season with salt and pepper to taste. -
Serve
Return salmon fillets to pan and nestle into sauce. Top with parsley and serve immediately. Enjoy!
