Oma's Paska
The family easter bread

INGREDIENTS:
- 4 cups scalded milk
- 4 cups all purpose flour + 7 cups flour
- 3 package yeast
- 1 cup warm water
- 2 teaspoons granulated sugar
- 3 cups sugar
- 18 eggs (with dark coloured yolks if possible)
- 1 teaspoon salt
- 1 generous cup butter
- juice and rind of 1 large lemon and 1 large orange
DIRECTIONS:
- Soften yeast in warm water and 2 teaspoons of sugar.
- Beat eggs well and slowly add 3 cups sugar ( take at least 5 minutes)
- Make a well in 4 cups of flour and pour the scalded milk over the flour. Beat until very smooth, then cool slightly.
- Stir egg mixture into the flour mixture. Add the citrus and softened butter and the yeast mixture
- Add approximately 7 more cups of flour while mixing . You will need a bit more flour while kneading. The dough should be somewhat sticky and messy. Let rise for approximately 2 hours. Punch and knead again and then let rise again.
- Let the dough rise a third time
- Butter and flour your pans.
- Put the dough into the baking pans. Bake in a 325 degree oven until done.
