Lemon Loaf

INGREDIENTS:
- Loaf
- 1/2 cup butter
- 1 cup granulated sugar
- 2 eggs
- grated rind of one lemon
- 1 ½ cups flour
- 1 teaspoon baking powder
- ⅛ teaspoon salt
- ⅔ cup milk
- Topping
- ¼ cup honey
- ⅓ cup granulated sugar
- ¼ cup lemon juice
- lemon slices
DIRECTIONS:
- Beat the butter, in a large bowl, gradually adding the sugar.
- While beating, add the eggs one at a time, then add the lemon rind.
- Sift together the flour, salt and baking powder and add to the bowl, alternating with the milk.
- Pour the mixture into a greased loaf pan and bake in the oven at 340 degrees for 1 hour
- Mix together the topping ingredients and heat until warm. Pierce the cake thoroughly while warm and pour topping over the top.
- When cool, decorate the cake with thinly cut lemon slices.
