Avocado Tomato Quiche

INGREDIENTS:
- 4 medium eggs
- 1 cup cottage cheese
- 2 medium ripe avocados, mashed
- 1 cup Parmesan cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 8 -12 tomato slices
DIRECTIONS:
- In a medium mixing bowl, add the eggs and cottage cheese. Stir to combine.
- Add the mashed avocados and stir to combine.
- Add the Parmesan cheese, mozzarella cheese, garlic powder and onion powder. Season with sea salt and black pepper, to taste, if desired. Stir to combine.
- Pour the mixture into a quiche pan or casserole dish that's been lined with parchment paper or sprayed with cooking spray. Cover the top with the tomato slices .
- Bake in a preheated 350-degree F oven for 30 to 40 minutes, or until the quiche is cooked through and golden. (If it's getting too brown on top, cover it with aluminum foil.) Allow to cool a bit before slicing and serving. Garnish with fresh basil leaves , if desired. Serve.
