Avocado Tomato Quiche

Avocado lovers, We have a great recipe for you. This creamy high-protein avocado egg Quiche wraps the flavor and nutrition of avocados into a delicious egg dish that packs a protein punch.

INGREDIENTS:

  • 4 medium eggs
  • 1 cup cottage cheese
  • 2 medium ripe avocados, mashed
  • 1 cup Parmesan cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 8 -12 tomato slices

DIRECTIONS:

  1. In a medium mixing bowl, add the eggs and cottage cheese. Stir to combine.
  2. Add the mashed avocados and stir to combine.
  3. Add the Parmesan cheese, mozzarella cheese, garlic powder and onion powder. Season with sea salt and black pepper, to taste, if desired. Stir to combine.
  4. Pour the mixture into a quiche pan or casserole dish that's been lined with parchment paper or sprayed with cooking spray. Cover the top with the tomato slices .
  5. Bake in a preheated 350-degree F oven for 30 to 40 minutes, or until the quiche is cooked through and golden. (If it's getting too brown on top, cover it with aluminum foil.) Allow to cool a bit before slicing and serving. Garnish with fresh basil leaves , if desired. Serve.
