Pizza and Flatbread Dough
This pizza dough can be ready to bake in only 30 minutes.
To convert this recipe to flatbread, reduce the yeast to 1 teaspoon and increase the sugar to 1 teaspoon

INGREDIENTS:
- 3/4 cup all-purpose-flour and 3/4 cup of "00" Italian flour or all-purpose flour
- 1 package instant yeast (2 1/4 teaspoons)
- 1 teaspoon table or kosher salt
- 1/2 or 1 teaspoon granulated sugar
- 2 tablespoons olive oil
- 3/4 cup water at 110 degrees F. ( use an instant-read thermometer such as a Thermapen)
DIRECTIONS:
- In the bowl of a food processor, combine both your flours, yeast, olive oil, salt, and sugar. Turn the machine on and off several times to mix the ingredients. With the processor motor running, slowly add enough of the hot water for the mixture to form a sticky ball. If the dough seems too dry, add a tablespoon of water at a time till it gets sticky. If too wet, add 2 tablespoons of flour at a time.
- Process until the dough forms a ball. Transfer the ball of dough to a floured surface and knead for about 2 minutes. Cover the dough with a tea towel and let it rest and rise for about 20 minutes.
- Punch the dough down and roll it out into a 12-inch circle. If making flatbread, roll it as thin as you. can.
- You may find it advantageous to pre-bake the crust about 5 minutes before adding your toppings.
