Chicken Marbella
Although this dish is named for Marbella, a stylish resort town just east of Gibraltar on the Spanish Riviera., it was actually first produced in New York City by the Silver Palette Cookbook ladies, Sheila Lukins and Julee Rosso. For the 21st century, the amount of chicken and sugar has been pared way down to give it the spirit of a healthy, Mediterranean style diet. This dish goes well with rice or orzo and a vegetable side such as roasted asparagus or green beans, raisins, and pine nuts.

Lemon Cake
An easy lemon sheet cake recipe that is made in a 9×13-inch pan and has a delicious simple lemon glaze on top. This lemon cake tastes even better the next day!

Linguine with Scampi Shrimp and Basil
Prepared Mediterranean-style and tossed in a light sauce with garlic, onions, white wine, and lemon juice. Add your favorite salad to start!

It is quite a revelation to realize how different (and better) a stew or chilli can taste when you use cubes of stewing beef instead of ground beef. Beware, of course, that this recipe takes around 2 hours to be ready, rather than 45 minutes.

With just a handful of ingredients, you can make a delicious fresh tomato sauce for pasta in 10 minutes flat.
There's a basic tomato rule of thumb when you're shopping at the supermarket: The smaller the tomato, the better, especially during the off-season.
Larger tomatoes are picked while still green; if they were allowed to ripen on the vine (as all tomatoes would be in an ideal world), they'd bruise themselves under their own weight during shipping. Cherry tomatoes, on the other hand, are picked when much closer to fully ripe. Their small size means that even when ripe, they're tougher.*
