Salmon is good for us. It is low in saturated fat, is one of the best sources of vitamin B12, contains healthy omega fatty acids and is a good source of protein, too. It's also loaded with potassium and other nutrients, like vitamin D and iron. In this particular recipe, the salsa is bursting with antioxidants for a wonderfully healthy combination.

Spinach, Feta and Rice Casserole

This one-pan recipe is the casserole version of spanakopita! It's hearty enough to enjoy as a vegetarian lunch or dinner, yet versatile enough to serve alongside just about any protein. To make it extra creamy, top each serving with a dollop of sour cream.

Cannelloni Al Pesto Genovese

A traditional style cannelloni with a couple of twists; the addition of pesto and some bechamel sauce on the bottom and top.

Chicken Cutlets with Sun-dried Tomato Cream Sauce

Crispy Convection-oven Fried Chicken Thighs

The skin on these chicken thighs is superb – it’s thin, crackly and exceptionally crispy. I can’t imagine thighs getting much crispier than this, even if you deep-fry them. Seriously, it can’t get any better than this.

When you need an impressive appetizer that you can “casually whip up" for friends (or bring to your friend's cousin's parents' house on Thanksgiving), buy a box of frozen puff pastry. Roll the sheets into rounds, create a pocket of spanakopita-inspired filling, then put your arts and crafts skillz to work.
